- 200g Butter (At room temperature)
- 300g Castor sugar
- 4 large eggs (At room temperature)
- 200g Cake Flour
- 80g Cocoa powder
- 1tsp Instant Espresso powder
- 3tsp Baking powder
- 1/4tsp Salt
- 300g Heavy Cream
- 2tsp Vanilla essence

Directions:
- Preheat oven to 180 degrees Celsius. Line two 12-cup muffin pans with cupcake liners.
- In a large bowl, sift together the flour, sugar, cocoa, espresso powder, baking powder and salt. Mix together just to combine.
- In a separate bowl, cream the butter using a stand mixer or hand mixer until pale and fluffy, about 3 minutes.
- Add the sifted ingredients, eggs, vanilla and cream to the butter all at once. Mix together on low speed just to combine, scrape down the sides of the bowl to ensure that everything is incorporated.
- Mix again for 20 seconds to ensure that everything is well combined. Do not over mix.
- Scoop the batter into the prepared cupcake liners, filling each about 3 quarters full. Bake for 20 minutes or until a toothpick inserted into the centre comes out clean.
These cupcakes can be enjoyed with all kinds of frosting. I love them most with my cookies and cream buttercream.
