Indulgence redefined: White Chocolate Chip Cookies That Melt in Your Mouth
Elevating the classic chocolate chip cookie experience, these delectable treats are a symphony of buttery goodness and creamy white chocolate. With this blog post as your guide, venture into the kitchen and create a batch of theses irresistible treats that will undoubtably become a favourite among friends and family. These don’t last a day in my kitchen, they disappear as soon as they’re out of the oven. They are really THAT delicious.
Makes approximately 15 cookies
Ingredients
- 50g Oats
- 50g Almond Flour
- 125g Cake Flour
- 1/2 tsp Baking soda
- 1/2 tsp Baking powder
- 1/2 tsp Salt
- 150g Butter (At room temperature)
- 200g Brown Sugar
- 1 Egg
- 1/2 tsp Vanilla extract
- 170g White chocolate chips/drops
Method
- Blend oats in a blender or food processor until its very fine. Add the almond flour, flour, baking soda, baking powder and salt, pulse to combine.
- In a separate bowl, cream the butter and sugar together until light and fluffy. You can do this with a stand mixer fitted with the paddle attachment, hand held mixer or whisk.
- Add the egg and vanilla and beat to combine.
- Add the flour mixture and the white chocolate chips and fold together until just combined.
- Using a tablespoon, scoop up chunks of the dough onto a baking tray. Chill the chunks in the fridge until the dough is firm and holds its shape.
- Once the dough is firm, line a baking tray with baking paper and preheat the oven to 160 degrees celsius.
- Place chilled cookie dough onto the prepared baking tray leaving generous space between each cookie because they will spread out.
- Bake the cookies for 12-15 minutes or until they have golden brown edges. If the cookies are still soft in the middle, no problem, they will harden on the tray after being removed from the oven.
- Allow the cookies to cool down before serving.
